Baked Capsicum with Fragrant Rice
Serves 1.
Ingredients:
1 firm red capsicum
¼ tablespoon olive oil
10ml olive oil, extra
¼ grated fresh ginger
1 clove
½ cardamom pod
7g silvered almonds
30g basmati rice
80mL water
¼ cinnamon stick
¼ clove garlic
20g frozen peas or 20g mince lamb or both
½ tablespoon chopped fresh parsley
Method:
- Cut the top of the capsicum off and put aside.
- Clean out the inside.
- Heat oil in a pan and add ginger, cook for 1 minute.
- Heat extra oil in a pan and add cloves, cardamom, nuts until slightly brown.
- Stir in the rice, water and cinnamon.
- Bring to the boil then cook on low heat with the pan covered for 15 minutes or until the rice has absorbed the water.
- Remove from the heat and allow to stand for 5 minutes covered.
- Discard the whole spices and cinnamon stick.
- Stir in garlic, peas or meat, parsley and ginger mix.
- Spoon mixture into capsicum, replace the top.
- Brush tops with a little oil and bake uncovered for 45 minutes in a moderate oven.
