Baked Capsicum with Fragrant Rice


Serves 1.

Ingredients:
1 firm red capsicum
¼ tablespoon olive oil
10ml olive oil, extra
¼ grated fresh ginger
1 clove
½ cardamom pod
7g silvered almonds
30g basmati rice
80mL water
¼ cinnamon stick
¼ clove garlic
20g frozen peas or 20g mince lamb or both
½ tablespoon chopped fresh parsley

Method:

  1. Cut the top of the capsicum off and put aside.
  2. Clean out the inside.
  3. Heat oil in a pan and add ginger, cook for 1 minute.
  4. Heat extra oil in a pan and add cloves, cardamom, nuts until slightly brown.
  5. Stir in the rice, water and cinnamon.
  6. Bring to the boil then cook on low heat with the pan covered for 15 minutes or until the rice has absorbed the water.
  7. Remove from the heat and allow to stand for 5 minutes covered.
  8. Discard the whole spices and cinnamon stick.
  9. Stir in garlic, peas or meat, parsley and ginger mix.
  10. Spoon mixture into capsicum, replace the top.
  11. Brush tops with a little oil and bake uncovered for 45 minutes in a moderate oven.
