Mushroom, Ginger and Tofu Stir-Fry


Serves 2.

Ingredients:
150g packet of tofu, drained
½ teaspoon of olive oil
½ clove garlic crushed
1 teaspoon chopped fresh ginger
50g oyster mushrooms, halved
100g button mushrooms, halved
½ medium sized red pepper sliced
40ml vegetable stock
½ teaspoon soy sauce
½ teaspoon raw honey
½ teaspoon sesame oil
1 teaspoon cornflour
1 green shallot chopped

Method:

  1. Cut tofu into small cubes.
  2. Heat oil in a wok, add tofu, garlic, ginger and cook until tofu slightly brown.
  3. Add the mushrooms, cook till browned. Add pepper and stock, sesame, honey, soy sauce and cornflour and stir over the heat until sauce thickens.
  4. Stir in shallots.
