SlimEZE Recipes

Chickpea and Pine Nut Salad
Serves 2.

Ingredients:
1 teaspoon cold presses vegetable oil
1 ½ teaspoons tomato puree
400g tin tomatoes
½ teaspoon dried garlic
½ teaspoon black pepper
1 teaspoon dried basil
Fresh parsley washed and chopped
225g chickpeas (dried or tinned)
75g pine nuts

Method:

  1. In a saucepan heat the oil and add the tomato puree stirring over low heat.
  2. Add the tinned tomatoes and mash. Add garlic, pepper and basil and stir in.
  3. Simmer for 10 minutes then add the chopped parsley.
  4. In a bowl combine drained chickpeas and pine nuts. Pour the sauce over the top and mix well.
  5. Serve warm or cold.
