Quick Cleanse Recipes
Codfish Patties
Makes approx 12.
Ingredients:
500grams cod
4 medium potatoes
1 small onion, grated
2tbs soy or rice milk
1tbs arrowroot powder
2tbs chopped fresh flat-leafed parsley
½ tsp ground black pepper
2tbs cold pressed extra virgin Olive oil
Method:
- Simmer cod, uncovered, for 15 minutes. Remove any skin & bones, flake cod finely.
- Steam potatoes until tender and mash well.
- Combine cod, potatoes, onion, arrowroot, milk, parsley and pepper in a bowel.
- With wet hands, roll 1/3 cup mixture into a ball & slightly flatten. Repeat until mixture is finished.
- Place patties on a baking tray that has been lightly brushed with oil.
- Bake in moderately hot oven for 10 minutes.
- Turn patties over, reduce heat to moderate and bake a further 20 minutes ,or until lightly browned.
