SlimEZE Recipes

Fennel and Bean Soup
Serves 4

Ingredients:
25g mixed dried beans
½ small onion chopped
40g chunk of lean meat chopped
45-50ml of vegetable or chicken stock
40g fresh spinach
1 bay leaf
Small head of fennel sliced thinly
Nutmeg
Pinch of saffron
Black pepper

Method:

  1. Soak the beans overnight in cold water.
  2. Drain and boil in 45mL of water.
  3. Skim off any foam from the surface.
  4. Add the onion, bay leaf, some nutmeg and black pepper.
  5. Add the meat and pour in the stock.
  6. Simmer over low heat for 40 minutes.
  7. Add the fennel and cook for another 10 minutes stirring well.
  8. Test if the beans are soft, then stir in the spinach and pinch of saffron.
  9. Remove the meat and serve hot.

    Variation: If you prefer a vegetarian soup leave out the meat.
