Mushroom, Ginger and Tofu Stir-Fry
Serves 2.
Ingredients:
150g packet of tofu, drained
½ teaspoon of olive oil
½ clove garlic crushed
1 teaspoon chopped fresh ginger
50g oyster mushrooms, halved
100g button mushrooms, halved
½ medium sized red pepper sliced
40ml vegetable stock
½ teaspoon soy sauce
½ teaspoon raw honey
½ teaspoon sesame oil
1 teaspoon cornflour
1 green shallot chopped
Method:
- Cut tofu into small cubes.
- Heat oil in a wok, add tofu, garlic, ginger and cook until tofu slightly brown.
- Add the mushrooms, cook till browned. Add pepper and stock, sesame, honey, soy sauce and cornflour and stir over the heat until sauce thickens.
- Stir in shallots.
