Ginger and Ricotta Pancakes
Serves 4.
Ingredients:
1 cup wholemeal flour
2 teaspoons baking powder
2 teaspoons ground ginger
500g ricotta
4 eggs
1 ¼ cups soy milk
1 teaspoon raw honey
4 bananas, sliced
Method:
- Sift the flour, ginger and baking powder in a bowl.
- Make a well in the center.
- Combine the egg yolks and 350g of the ricotta and the milk and add to the center of the flour mixture.
- Mix well.
- Beat the egg whites until fluffy and fold into the ricotta mixture.
- Heat a pan and lightly brush with cold pressed olive oil.
- Add ¼ of the pancake mixture to the pan and cook on low heat until bubbles appear on the surface.
- Turn the pancake over to cook the other side until golden brown.
- Continue until the batter mixture is used up.
- Slice the bananas and serve on each pancake with a dollop of remaining ricotta.
For a variation try different adding different fruit such blueberries or strawberries
