SlimEZE Recipes

Ginger and Ricotta Pancakes
Serves 4.

Ingredients:
1 cup wholemeal flour
2 teaspoons baking powder
2 teaspoons ground ginger
500g ricotta
4 eggs
1 ¼ cups soy milk
1 teaspoon raw honey
4 bananas, sliced

Method:

  1. Sift the flour, ginger and baking powder in a bowl.
  2. Make a well in the center.
  3. Combine the egg yolks and 350g of the ricotta and the milk and add to the center of the flour mixture.
  4. Mix well.
  5. Beat the egg whites until fluffy and fold into the ricotta mixture.
  6. Heat a pan and lightly brush with cold pressed olive oil.
  7. Add ¼ of the pancake mixture to the pan and cook on low heat until bubbles appear on the surface.
  8. Turn the pancake over to cook the other side until golden brown.
  9. Continue until the batter mixture is used up.
  10. Slice the bananas and serve on each pancake with a dollop of remaining ricotta.

    For a variation try different adding different fruit such blueberries or strawberries
