Quick Cleanse Recipes
Sweet & Sour Snapper
Serves 4-6.
Ingredients:
1 kg whole snapper
2 stalks shallots
2 slices ginger root
1 tbs salt-free vegie seasoning
2 tbs shredded ginger root
2 tbs shredded spring onion
1 tbs shredded red hot pepper
2 tbs shredded green pepper
1 tbs cold pressed extra virgin olive oil
10-15 cups purified water
4 tbs roasted sesame oil
4 tbs roasted sesame oil
4 tbs cold pressed extra virgin olive oil
6 tbs brown rice vinegar
6 tbs barley malt
1 tsp mustard powder
½ tsp arrowroot flour
1-2 tbs purified water
2-3 sprigs coriander
Method:
- Rinse fish.
- Rub with the first four ingredients inside & out. Let stand 20minutes.
- Meanwhile, shred all the vegetables.
- Drain off fish, combine in pot oil, and water. When it reaches boiling point, place whole fish in. (Water should cover fish)
- Cover & when the water boils again, turn off heat. Let sit covered 15 minutes.
- Remove fish to a serving platter.
- Heat the roasted sesame oil and spoon over the fish.
- Heat the wok, add the other oil and stir fry vegetables.
- Add the next 3 ingredients and cook until the mixture boils.
- Disolve the arrowroot in water, stir in wok and mix till thick and clear.
- Pour sauce over fish and garnish with coiander.
