Tabbouleh
Ingredients:
75g cracked wheat (burghul)
50g flat leaf parsley washed and finely chopped
50g fresh mint
6 spring onions chopped
2 large lemons
80mL cold pressed olive oil
2 medium tomatoes
Sea salt and black pepper
Method:
- Juice the lemons and pour over the cracked wheat.
- Allow to stand for one hour or until swollen and soft.
- Stir occasionally.
- Mix the chopped parsley, mint and spring onions together and add to the cracked wheat.
- Stir in the olive oil season with salt and pepper.
- Mix in the tomatoes.
- Transfer to a serving dish.
Can be kept in the fridge for a few days and be used in salads, sandwiches or simply as a side dish.
