Tabbouleh

Ingredients:
75g cracked wheat (burghul)
50g flat leaf parsley washed and finely chopped
50g fresh mint
6 spring onions chopped
2 large lemons
80mL cold pressed olive oil
2 medium tomatoes
Sea salt and black pepper

Method:

  1. Juice the lemons and pour over the cracked wheat.
  2. Allow to stand for one hour or until swollen and soft.
  3. Stir occasionally.
  4. Mix the chopped parsley, mint and spring onions together and add to the cracked wheat.
  5. Stir in the olive oil season with salt and pepper.
  6. Mix in the tomatoes.
  7. Transfer to a serving dish.

    Can be kept in the fridge for a few days and be used in salads, sandwiches or simply as a side dish.
