Serves 4.
Ingredients:
500 grams chopped bream
½ cup wholemeal breadcrumbs
½ cup ground walnuts
¾ cup water
1 cup minced onion
¼ cup sliced olives
1 tsp lemon rind
1 tbs grated ginger
½ cup chopped parsley
½ tsp basil
1 tsp prepared mustard
2 tbs oil
2 tbs miso
Teriyaki Sauce
1 cup miso
2 tsp grated ginger root
2 cloves garlic 1 tsp roasted sesame oil
1 tbs barley malt
Method:
- Combine all the ingredients and blend until creamy.
- Preheat oven to 190°c.
- Oil 15cm by 12cm by 5 cm loaf pan, smooth into pan & cover and back for 15 min.
- Remove cover & bake until set and lightly browned.
- Remove from oven & cool before slicing.
- Blend first 4 ingredients together.
- Place in saucepan and simmer 10 minutes.
- Add barley malt and cook 5 minutes longer.
- Spoon over cut slices of loaf.
