Serves 6.
Ingredients:
500 grams block of tofu, mashed
1 large onion, finely chopped
1 stick finely sliced celery
2 cloves crushed garlic
1 cup breadcrumbs
1 cup rolled oats
2 tbs tahini
2 tbs salt-free tamari
2 tbs curry powder
1/3 cup natural salt & preservative tomato sauce/ paste
½ cup fresh chopped parsley
1/3 cup extra tomato sauce/ paste
Method:
- Combine all ingredients thoroughly except last 2 and press into a lightly oiled baking dish.
- Combine extra tomato sauce and spread over the top of the loaf, then sprinkle with sesame seeds.
- Bake 1 hour in a medium oven.
- Stand 10 minutes before cutting.
Serve hot with vegetables, or cold with salad.
Use as a filling for sandwiches, jaffles, pies, pastries and rolls.
